A Healthy Berry Smoothie That Tastes Just Like Ice Cream

When I was trying the Whole30 diet, it became clear to me that I had to rethink my go-to smoothie for breakfast.

I started experimenting and came up with something super simple, but tastes amazing. I was shocked how thick and creamy it tasted — just like berry ice cream on a cold summer day. Plus, it’s completely Paleo, Whole30, whatever-diet-you’re-currently-on friendly.

Berry Smoothie
Serves 1 (or two 6 oz. portions)

3/4 cup frozen mixed berries (I prefer Trader Joe’s Berry Medley, which includes strawberries, blueberries, raspberries and blackberries for $2.99 a bag)
1 banana
1 spoonful of almond butter (smooth and salted)
1/2 cup almond milk (unsweetened vanilla)
1/2 cup of cold water

1. Blend everything together on high until it’s well mixed.

If you’re using fresh fruit instead of frozen, throw in some ice cubes so it’s nice and cold.

Side note: New to the blogger world, it still feels pretty silly taking photos of me drinking a berry smoothie on a random Saturday afternoon, but a picture of a smoothie on a white backdrop can get a little boring. Evan and I weirdly had a lot of fun shooting this in our apartment — so much fun that it was hard to get a shot where I wasn’t laughing. I put some bloopers below because I just couldn’t resist. Sometimes you just have to see a little behind the scenes and share in the laughter.
